Banana Pancakes

Ingredients:

  • 1 banana

  • 2 eggs

  • 1 tsp cinnamon

  • 1-2 tbsp ground walnuts or almonds

  • Optional: 1 tbsp ground flaxseed

  • Optional: 1 tsbp peanut butter


Instructions:

  1. Mash up bananas in a large bowl

  2. Whisk eggs (using a fork is just fine!) and add to banana paste

  3. Mix in ground nuts and cinnamon

  4. Fry in a pan with a little heated oil or butter


Topping ideas:

  • Little bit of honey

  • Yoghurt (for a non-dairy option, unless using coconut yoghurt)

  • Berries

  • Whipped coconut cream
