Haloumi and Turmeric Sauteed Veggies

Ingredients:

·         75g haloumi cheese cut in slices

·         1 handful of kale or spinach

·         1 handful chopped white button or Portobello mushroom

·         1 small finely chopped red onion

·         Butter or coconut oil

·         ¼ tsp turmeric powder

·         ¼ tsp garam masala powder

·         Salt and pepper to taste

·         This recipe is also nice with capsicum, zucchini and cabbage

 

Method:

-          Add a little butter or coconut oil to a frying pan or skillet on low-medium heat

-          Sautee the onions until slightly cooked but not yet translucent

-          Add in the mushrooms, kale and spices and stir until cooked

-          Set aside on a plate and add a little more butter or coconut oil if needed for frying the haloumi

-          Fry the haloumi until golden brown on each side and ready to serve
