Salmon and Kimchi Salad

GLUTEN FREE AND DAIRY FREE

3 servings

 

Ingredients:

  • 1 can of Wild Alaskan Salmon

  • 4 tbsp of kimchi (or more)

  • 1 small chopped capsicum

  • Lettuce

  • 1 tbsp aioli

  • 2-3 tbsp extra virgin olive oil

  • Salt to taste

  • Coriander for garnish

  • 1-2 tbsp Freshly squeezed lemon juice (optional)

 

Directions:

1.    Mix the salmon, kimchi, chopped capsicum, aioli, olive oil and salt

2.    Place over the lettuce and garnish with coriander

3.    Squeeze lemon juice over it

4.    Enjoy!
